Healthy treats and happy eating at the Happy Kitchen bakery and canteen in Hackney
Believe me, Happy Kitchen apple cake is as good they come. It’s not just the taste, or even the sugar-free, spelt-flour healthy promises.
‘Food, love, the planet and health, that’s us in a nutshell,’ say Ellie Pennington and Lisa Stockton, the childhood friends and bakers extraordinaire behind the Happy Kitchen and all its slow and sustainable values. As much as possible, they use local ingredients, sourced from small-scale, eco-friendly producers. Their recipes are all lovingly handmade and based on the English seasons, and when they’re not busy baking or bicycling their orders around London (to keep the carbon footprint down, of course) they’re generally off teaching children about seasonal and sustainable food. And as if that wasn’t enough, the Happy Kitchen is a social enterprise, donating all profits to Action Against Hunger. Phew, how much good karma can one slice of apple cake horde?!
